 1 pound of cooked turkey
 1 green peppercut into 1-inch chunks
 2 stalks celerycut into 1/4-inch slices
 1 medium onioncut into wedges
 2 fresh tomatoescut into 1/2-inch chunks
 15 oz can tomato sauce
 ½ tsp ground thyme
 ½ tsp garlic powder
 ¼ tsp pepper
 ¼ tsp paprika
  tsp cayenne
 1 ½ cups Minute Rice

Cut turkey into eight 1/4 inch slices; set aside. Combine remaining ingredients, except rice, in a skillet over medium beat. Bring to boil; tum down the heat. Cover, simmer 10 minutes. Increase heat and bring to a boil again. Stir in rice and top with turkey. Turn down the heat. Simmer 8 minutes more.
Yield: Makes 4 servings.
