 2 lbs ground beef
 1 egg
 ¾ cup cracker crumbs
 1 medium-sized onion, chopped
 1 15 oz can tomato sauce
 2 tsp salt
 ½ tsp sage
 ½ tsp oregano
 ¼ tsp garlic powder
 ¼ tsp pepper
 2 oz mozzarella cheese, grated
 4 stuffed green olives, sliced
 ¼ tsp oregano

Combine ground beef, egg, cracker crumbs and onion. Mix tomato sauce, salt, sage, oregano, garlic powder and pepper. Ad 2/3 of the seasoned tomato sauce to beef (reserving 1/3 for topping) and mix lightly but thoroughly. Place mixture in a 9x5 inch loaf pan, pressing to form a loaf. Spread reserved seasoned sauce over top of loaf, and bake in a 325 degree oven for 1 hour and 30 minutes. Sprinkle with cheese and ¼ teaspoon oregano and arrange sliced olives on top of loaf. Bake 5 minutes. Let stand 10 minutes before slicing.
Yield: 6 to 8 servings.
