From Libby's Solid Pack Pumpkin

Pumpkin Cookie Bars
1 cup flour
½ cup quick oats
½ cup firmly packed brown sugar
¼ cup chopped nuts
1 ¾ tsp cinnamon
½ cup melted butter
1 cup canned solid pack pumpkin
¾ cup undiluted evaporated milk
1 slightly beaten egg
⅓ cup sugar
½ tsp allspice
¼ tsp salt
Cream Cheese Topping
8 oz package of cream cheese, softened
¼ cup orange marmalade
crushed granola, chopped nuts or orange peel for garnish
Pumpkin Bars

Combine flour, oats, brown sugar, nuts and 1 tsp cinnamon. Add butter; mix until crumbly. Press into bottom of 13 x9 baking dish. Bake in 350 degree oven 20 to 25 minutes. Remove from oven. Reduce oven temperature to 325 degrees. Combine remaining ingredients. Pour over crust. Bake in 325 degree oven for 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely
Yield: 32 bars
Cream Cheese Topping

Beat together until fluffy cream cheese and orange marmalade. Spread over cooled bars. Garnish with crushed granola, chopped nuts or orange peel.
